Good Luck For the New Year

We know that black eyed peas are heart healthy and loaded with protein. They are also the symbol of prosperity for the New Year. Here is a yummy recipe and fun serving idea that the kids will enjoy making and hopefully eating. This idea came from Disney's magazine, Family Fun.

Ingredients
2 bacon strips, cut into 1-inch pieces
2 cups chopped red or green bell pepper
1/4 cup diced onion
1 tomato, chopped
1/4 teaspoon chili powder
Salt and pepper to taste
2 cups fresh or frozen black-eyed peas
3 cups chicken broth
2 cups cooked rice
1 cup grated Cheddar cheese
Sour cream and cherry tomatoes (for garnish)

Instructions
In a medium saucepan, saute the bacon for 5 minutes. Stir in 1/2 cup of the bell pepper, the onion, the chopped tomato, the chili powder, the salt and pepper, and the black-eyed peas. Pour in the broth and bring the mixture to a low boil, then simmer it uncovered for 1 hour or more, stirring occasionally, until the liquid is absorbed.
Layer the peas, rice, cheese, and remaining bell pepper in parfait glasses. Top with sour cream and a cherry tomato. Serves 6 to 8.

What Is Black Friday?


Everyone gets really excited about Black Friday. Jellybeans is opening at 8am with 40% off our entire store until 11 am. Everything will be reduced 30% for the remainder of the day. But what is Black Friday really all about?
I have found two definitions as to the Black Friday designation.
In 1975, the economy was really poor (does that sound familiar), and retailers across the USA decided to post huge after Thanksgiving sales. Even though economic times were bad, it turned out to be a huge shopping day, complete with traffic jams and crowd control issues. Since then, the day after Thanksgiving has been known as Black Friday.
From a retail standpoint Black Friday may mean the beginning of the season that they go 'in the black', that is they make money. In accounting, negatives were written in red ink, while positive amounts were written in black ink. Thus, Black Friday is when the books begin to see more black ink marks then red! In other words, the profit that retailers make for the year should be the amount of their sales for the month of December.

TeePee's For The Kids Thanksgiving Table

Here is another cute idea for the kids Thanksgiving table. I saw this on Disney's Family Fun Magazine's website.
Historically, an Indian tepee was made from a cone of long poles and a hide covering that appeared shiny white until the hearth fire cured it. Construct a village of similarly handsome -- though edible -- tepees with this food craft.
Ingredients
Sugar cones
Confectioners' sugar
Unsalted butter
Vanilla extract
Cake-decorating icing
Decorative candies
Toothpicks

Instructions
In a mixing bowl with an electric beater set at low speed, mix 2 cups of sifted confectioners' sugar, 1/4 cup of softened, unsalted butter, and 1/2 teaspoon of vanilla extract until smooth and spreadable. Stir in a bit of milk, if needed.
Use the icing to lightly frost eight ice cream sugar cones, then place them in the freezer for a few minutes until the icing hardens.
Now use tubes of cake-decorating icing to draw linear patterns and images and glue on decorative candies. For lodgepoles, insert toothpicks into the tip of each cone

Turkey Cookies For The Kids Table

Here is a great idea for the kids table that they will also enjoy making. These fun turkey cookies start with striped shortbread cookies, a chocolate covered cherry, candy corn, and canned icing. What could be easier!
Turkey Cookies - Simple and Oh so cute!
Ingredients:40 fudge striped cookies
1/4 cup chocolate frosting
two 5 oz. Pkgs. Chocolate covered cherries
20 pieces of candy corn
Place 20 cookies on a flat surface, solid chocolate side down. With frosting attach a chocolate-covered cherry to the top of each base cookie. Position another cookie perpendicular to each base cookie; attach with frosting. With a dab of frosting, attach one piece of candy corn to the front of each cherry for the head. Let stand until set. Makes 20 cookies

Meet Micah Steven Nicholson

My good friends Stephen and Amy are missionaries in South Africa. They are the proud parents of their second little baby boy. He came home with them today and big brother Vusi is sooo proud. 18 Kids and Counting Wear Jellybeans

Kelly called last night and told me to turn on 18 Kids and Counting. The family had taken a field trip to an ostrich farm, and then went home to prepare scrambled ostrich eggs. Little Jordan was sitting up so big in her Le'ZaMe smocked cherry dress that we sent when she was born. We enjoy this show, and the encouragement and family values that the Duggar family portray.

Aunt Betty's Chicken and Dressing Casserole

Are you craving that taste of dressing? Fix this quick weeknight casserole for your family. Prepare it the night before, then all you have to do while Dad is bathing the kids is bake the casserole and prepare a salad or vegetable. The Louis Rich oven roasted chicken works great if you don't have time to stew your chicken.

1 (8 oz) pkg. seasoned bread stuffing (Pepperidge Farm)
1 stick butter
1 cup water
2 1/2 cups diced, cooked chicken ( about 4 lrg. breast)
1/2 cup chopped onion
1/4 cup chopped green onion tops
1/2 cup chopped celery
1/2 cup mayonnaise
3/4 tsp. salt
2 eggs
1 1/2 cups milk
1 can Cream of Mushroom Soup
1 1/2 cup Grated Cheese for topping
Mix packaged stuffing with melted butter & water; toss lightly to blend. Place half of the mixture in a buttered 12 x 8 dish. Mix diced chicken, onion, onion tops, celery, mayonnaise & salt. Spread over stuffing mixture. Top with remaining stuffing mixture. Beat eggs slightly and add to milk. Pour evenly over stuffing mixture. Cover with foil and refrigerate overnight. Take out 1 hour before baking; spread with 1 can Cream of Mushroom soup Bake in a 325 degree oven for 40 minutes. Sprinkle top with grated cheese. Return to oven for 10 minutes.
