Jellybeans Favorite Cookies

Every year my husband Walter and baby daughter Amy made hundreds of different cookies together the day after Thanksgiving. I always went Christmas shopping and came home late and tired to the biggest disaster area of the world. They were oblivious to the mess and cookies were on racks all over the kitchen counter. They had such a good time baking that it was well worth the clean up effort. After several slight recipe changes the following recipe was voted the best and favorite by our family and friends. It is a variation of a Martha Stewart Oatmeal Cookie recipe.

Bailey's Famous Martha Stewart Cookies

1 1/2 cups all purpose flour

1 teaspoon baking soda

1 cup unsalted butter, room temperature

3/4 cup granulated sugar

3/4 cup light brown sugar

1 egg

1 teaspoon vanilla extract

1 1/2 cups oatmeal

1 cup chocolate covered raisins

1 cup semisweet chocolate chips

1 cup heath bars , put in baggie and crushed with hammer-Amy's job

Heat oven to 350 degrees. Sift together flour and baking soda, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium high speed until light and fluffy-2 to 3 minutes. Scrape down the sides of the bowl once or twice during mixing. Add egg, and mix on high speed to combine. Scrape down the sides of the bowl.

Add the flour a bit at a time on low speed until well combined. Add oatmeal, raisins, chocolate chips, and toffee pieces, mix to combine.

Spooon by tablespoons onto silpat lined baking shText Coloreets. Bake until light brown 8 to 1o minutes. The secret of this cookie is the baking-the edges should be brown and the center a lighter color. You want them to be crispy on the edges and gooey in the center. They are really good. Transfer to a baking rack to cool.
We have already eaten one batch at Thanksgiving and I am making and freezing another tonight.
Your little one will be entertained while you are baking with the Melissa and Doug Slice and Bake Cookie Set. It is such a great toy with lots of velcro cookies to be cut, baked, and decorated.
